Creamy Pumpkin Oatmeal

I eat oatmeal every morning so sometimes I have to get creative with recipes. This recipe turned out delicious!

1 Cup steel cut oats
3/4 Cup canned fat-free evaporated milk
1 Cup pumpkin
2 3/4 Cups water
1/4 Cup sugar
1 teaspoons pumpkin pie spice
2 TBSPS maple syrup
1/2 tsp vanilla

Put it all in a crock pot, mix until there are no more chunks left. Cook on low for 8 hours (while you sleep).

I make this on the stove top with quick oats. It takes about 2 cups of quick outs to get thick and I add a little extra spice and sugar when I add more oats. I like my oatmeal thicker than the recipe calls for. Enjoy!- Raney
