Squash season

As requested by mom, I present my Butternut Squash soup recipe:

Butternut Squash Soup

1 butternut squash
4 sour green apples
3 tbls butter
3-4 Leeks, white part only
2 cloves garlic, chopped
¼ tsp red chili pepper
1 tsp coriander
1 tsp cinnamon
Salt and Pepper to taste
6-8 cups chicken broth
Optional: sour cream

Use a potato peeler to remove squash’s skin. Remove seeds and cube. Cube apples, leaving skins on. Set aside.
In a large pot, melt the butter. Add chopped leeks and garlic. Sautee a few minutes till tender. Add squash and apples to pot. Mix spices together, then toss with the mixture in the pot. Add chicken broth til mixture is covered. Bring to a boil, then simmer til tender (about 30 minutes). Remove from heat, puree soup using a hand blender. Serve with sour cream and crusty bread.
